Country Wine Workshop. 3 April, The Hollies Centre for Sustainability
I'll be giving the first wine workshop of the year at the lovely Hollies Centre in Enniskeane, West Cork. At this workshop we will learn how to make a fruit wine using frozen fruits, flower wine, mead and sparkly beer style wines. We will cover everything from recipes, essential equipment, hydrometer use, techniques, skills and sterilisation. I do not use sulphites in the making of my wines; at this workshop I will share how to make good, drinkable country wines without sulphites. Greener Home and Body Care Workshop
Saturday June 18, 10am- 3pm. Rediscovery Centre, Ballymun
This workshop takes place in the Rediscovery Centre in Ballymun. It is a full day workshop covering many aspects of non-toxic home and body care. You will learn how to make soap, moisturisers and much more. This event is being hosted by the Rediscovery Centre. Foraging walk and wild tea making
Saturday 17 July, Sonairte, Laytown
We will spend a few hours foraging for plants around the gardens and nature trail at beautiful Sonairte. We will then spend time turning these into teas and cordials. We will have a herbal tea party while learning how to make cordial, learning about medicinal herbs and how to ferment and dry herbs for later use. Crafting with nature's bounty
Join me for a day of crafting! Garland making, eco-printing and dyeing, plaster outprints, that type of thing. You will leave the workshop with skills that you can share with your family. These are all simple crafts that do not require a lot of skill or dexterity.

Foraging for cordial and syrup ingredients, gin making, campfire feasting and drinking, cordial, cocktail and mocktail making. Forging new friendships, learning about the interesting flavours that can be found in the wild. And learn about cocktail construction. The balancing of flavour, acidity alcohol and sweetness.
